Sorry to be dumb but what does "switch" escort mean?

Means its a bait & switch. Baited by one escort maybe in photographs, then a different escort is sent for the bookings. Some agencys do this.

What "switch" escort usually means is that is willing between dominant and submissive behaviour.

For example, you might fancy a role play which starts as you in the dominant role (e.g. Playing a doctor disciplining a nurse) that moves after a time to her controlling you "No, doctor... you're going to do what I want because I've got a load of incriminating photos from you from earlier meetings").

For such a role play, you really need a "switch" escort... somebody who's reasonably confident in "taking orders" or being "the boss". (Won't say has to be equally comfortable... because nearly everybody has some preference. But its certainly true that some very dominant or very submissive people, simply just won't switch at all.)
